Dream Cruises introduces sumptuous “A Taste of The Palace” experience

The charm and appeal of a luxurious all-inclusive holiday packed to the brim with a treasure trove of world-class cultural and adventuring activities is attractive to say the least, and that’s exactly what World Dream, the luxury cruise ship run by Dream Cruises, offers its lucky guests as part of its premium Palace offering.

Occupying the upper levels of the 335m-long, 18-deck vessel, The Palace is an innovative “ship within a ship” concept that serves up 150 sumptuous suites and villas, replete with VIP facilities such as private pools, spa, gym and fine-dining venues that are only accessible by Palace guests. In a bid to heighten the luxury factor even further, the cruise liner recently announced the introduction of an all-new dining experience – “A Taste of the Palace”. The second annual instalment of Taste the Dream – Wine and Dine at Sea culinary programme from Dream Cruises, the showcase offers lucky Palace guests booking this package a unique insight into the dishes favoured by imperial families of both the East and West.

Helming the first of this two-pronged epicurean journey is Chef Ivan Li of Family Li Imperial Cuisine, whose ancestor Li Zijia once oversaw the imperial kitchens of Empress Cixi, the famed Qing dynasty ruler. Building on this storied legacy, his The Forbidden Banquet recreates dished favoured by the Qing royal family. Highlights here include the delicate Bird’s Nest with Pheasant Meat and Vermicelli, all subtle flavours melded with unique textures, the Stir Fry Lobster in Beijing Style – succulently fresh morsels of lobster packed to the brim with umami notes – and, of course, the Tofu of Jade, a viridescent grean pea puree said to be a favourite of Empress Cixi herself.

Journeying to the other side of the world, the second immersive culinary experience comes in the form of The Queen’s Feast. Ably overseen by Chef Darren McGrady – whose tenure as the personal chef of both Queen Elizabeth II and Princess Diana gives him a unique insight into the nutritional cravings of Britain’s royalty – the degustation menu here features heavy hitters such as the luxuriously creamy Asparagus Veloute, Ballotine of Salmon with a low-fat tomato and dill mousse (a special request from Princess Di, an avid fan of healthy eating), and the Queen’s personal favourite of Juniper Crusted Venison with Truffle Oil Risotto.

Not satisfied with just tantalising your taste buds, though, Dream Cruises will also be treating programme guests to a plethora of cultural highlights, including Peking opera, British-style garden tea parties and even a Beatles tribute concert or two for good measure. Luxury cruise purveyor Dream Cruises welcomed Hong Kong’s trendiest souls for a fashion extravaganza aboard its luxury liner The Palace, including the Asia debut fashion show of Ladyship, the high-end British swimwear label founded by British aristocrat and socialite Lady Victoria Hervey. A thoroughly enjoyable evening with a series of cocktails and culinary treats, the night was made even more special by a spectacular water ballet performance by the Mermaid Princesses, and fashion tips by celebrity stylist Noni Ware.

Dream Cruises brings haute cuisine to the seas with a culinary extravaganza titled Taste the Dream – Wine and Dine at Sea, a fine-dining showcase by six of Asia’s most famous chefs.

From June to November 2018, guests who book the ‘Taste the Dream 2-Night Weekend Escape Cruise’ package availing suite accommodation in The Palace will be treated to limited-edition tasting menus specially created by this choicest selection of chefs. The six celebrity chefs who make their cruise debut on World Dream are Alvin Leung, triple Michelin-star expert in molecular gastronomy, Chan Kwok Keung, world champion at the Chinese Cuisine World Championship, Vicky Cheng, the youngest chef to receive a Michelin star in Hong Kong and a master of French-Chinese fusion cuisine, Christian Yang, globe-trotting food lover, Wan Tat Kong, member of the International Jury Committee, World Association of Chinese Cuisine, and Martin Yan himself, the famous host from the award-winning cookery show Yan Can Cook.

But the Dream Cruises’ truly dreamy offerings don’t end there. The Palace itself – World Dream’s concept of a ship within a ship – offers 154 beautiful suites with butler service and private dining and lounge areas, among other inclusive benefits. Cruise Controller: Loui Lim truly has a Dream job…

Loui Lim, the youngest son of Malaysian billionaire, Tan Sri Lim Kok Thay, looks poised to carry on his family’s legacy. At just 29, he’s the Director of Dream Cruises Holding Limited, Dream Cruises Management Limited and Genting Dream Limited and also the Vice President, Brand Strategy, Marketing and Communications of Dream Cruises.

Gafencu reporter Suchetana Mukhopadhyay talks to Loui Lim about his Dream job and beyond…

Loui Lim

You had quite an unusual childhood…

I actually grew up across three different continents. I was born in Australia, spent much of my early childhood in Malaysia and was then educated in the UK. Many of my earliest memories are of painting. I was quite artistic as a child. I’d spend a lot of time in the garden with a pencil and a sheet of paper, doodling away at whatever caught my fancy.

Given your diverse experiences, is there any place you are particularly attached to?

I spent my formative years in the UK, so it holds a very special place in my heart. When I first arrived in London, I was particularly drawn to the cultural contrast between the very posh neighbourhoods of West London and the very gritty, very hipsterey feel of East London.

As the son of a successful businessman, do you feel a particular pressure to excel?

Children born high-profile families inevitably feel a certain kind of pressure and this obviously intensifies if you are working for the family business. I know my father faced a similar pressure from his own father when he first joined the business. It is his success that inspires me.

Given that you have management positions across several family businesses, how do you ensure you have enough time for everything?

It can, indeed, be difficult to manage you time when you have a multi-faceted role to play. You need great organisational skill, something I am still trying to master. Overall, though, there is no clear answer and you just have to attack everything head on.

With the cruise sector becoming ever more cluttered, how does Dream Cruises manage to stand out?

Dream Cruises is uniquely focused on catering to Asian guests, with World Dream in Hong Kong/Guangzhou to service to the China and North Asian market and Genting Dream in Singapore for the Southeast Asian market.

Our itineraries encompass popular destinations around the region from the islands of Okinawa to Phuket and Ko Samui in Thailand, Halong Bay in Vietnam and North Bali, Indonesia.

We offer all the home comforts and services that Asian people have come to expect. As a company of Asian origin, I believe we understand the needs of our customers far better than any of our competitors.

Tell us a bit more about another of your businesses – Crystal Air Cruises…

It’s been an exciting year for Crystal Air and we have just stared operating a Boeing 777 service. As you know, Boeing 777s are commercially-proportioned airplanes and would normally accommodate up to 300 passengers. We, however, have customised it, optimising its use for just 88 travellers. It now offers leather flatbed seats, gourmet chefs, multilingual attendants and executive-class comfort.

With luxury travel booming right now, how are you looking to capitalise on this?

There is, indeed, a surge in demand for luxury travel at the moment. People are not just looking for a generic experience, they want something unique and inspirational. And they’re willing to pay for it. Our businesses are very well positioned to capitalise on this trend as they can provide genuinely immersive and inspirational experiences. On Dream Cruises, for instance, we frequently invite motivational speakers, wellness gurus and similar inspirational individuals to come onboard.

We’re also planning to launch two more global-class ships, both of which will harness the very latest in artificial intelligence, voice and facial recognition technology and many other digital innovations. These ships will offer a state-of-the-art VR experience, as well as water parks, amusement areas and even a roller coaster. Come 2020, we will launch the world’s largest mega-yacht, purpose-built to sail to Antarctica.

Do any of your recent travels stand out as particularly memorable?

Well, we organised a special New Year’s itinerary for Crystal Skye. This saw us fly our guests to Sydney to watch the New Year countdown fireworks over Sydney Harbour. Then we flew them back in time, travelling across continents so they could experience the New Year countdown again, this time on the sandy beaches of Honolulu. That was an incredible experience and one I will never forget.

In term of your charity work, are there causes that particularly appeal to you?

There’s this great charity, Impact Hong Kong, which helps get homeless people off the street. It finds them jobs, provides them with accommodation and gives them a second chance in life. It’s a great cause and I am planning to get more involved with it. Not so long ago, I’d attend social events for a number of charities, such as amfAR. Now, though, I’d much prefer to get involved at a face-to-face level, so that I could actually see that I was making a difference.

Out of this world experience on Genting Dream

What do an astronaut, National Geographic photographer and a martial arts expert have in common? And, no, this isn’t a dirty joke. They are all part of Genting Hong Kong Dream Cruise’s new “Dreamscapes” programme.

The interactive guest activities and talks from award-winning National Geographic photographer Michael Yamashita; kung-fu star JuJu Chan, popularly known as the “female Bruce Lee”; and  astronaut Dr Leroy Chiao, who is a former international space station commander and has logged 229 days in space, will be held on the company’s first cruise liner, Genting Dream.

The recently completed Genting Dream has 1,674 staterooms, with over 70 percent offering private balconies, plus 100 connecting rooms for families and groups. The cruise ship also has a butler service, 35 restaurants and bars and six water slides.

Dream Cruises, the first-ever Asian luxury cruise line, plans to cater to the large and rapidly growing high-end cruise market in China and Asia.
